Vegan ice cream

Vegan ice cream recipes built on coconut, cashew and oat bases — no dairy, no eggs, with the mix composition worked out from the ingredients.

Vegan ice cream lives or dies by what replaces the milk solids. In dairy ice cream the milk proteins and lactose bind water and give the scoop its body; without them ice crystals grow faster and the result is harder. Coconut milk (fat), cashews (smoothness) and oat bases (body) come closest — usually with a little extra stabiliser.

That is why vegan recipes fall outside the target range for milk solids. It is not a fault in the recipe but the nature of the base: every recipe shows the calculated composition and which value sits outside the range, and why.
