How to make homemade ice cream smooth, creamy and easy to scoop — and what to do when it goes wrong. Every tip comes with an explanation of why.

Making the mix
Use only pasteurised milk and cream
Make ice cream with shop-bought milk and cream that have been pasteurised. If you use raw milk from a farm, bring the mix to the boil first.
Why: Raw milk can carry harmful bacteria, and freezing does not kill them — ice cream is never heated again before it is served.
Don’t cut the sugar by guesswork
If you want a less sweet ice cream, don’t simply reduce the sugar in a recipe. Replace part of it with other solids, or pick a recipe designed for less sugar.
Why: Sugar lowers the freezing point, so some of the water stays unfrozen even in the freezer. Without it the ice cream is harder and icier.
Keep sweeteners at 12–16 % of the mix
Add up all the sugars in the recipe (sugar, dextrose, syrups) and compare them with the weight of the whole mix. In a typical dairy ice cream they should make up about 12–16 %.
Why: In this range the ice cream is pleasantly sweet and can still be scooped at freezer temperature.
Add dextrose for a softer ice cream
Replace about a quarter to a third of the granulated sugar with dextrose. The ice cream will be softer straight from the freezer and a little less sweet.
Why: Simple sugars lower the freezing point more than beet sugar does. Dextrose is also less sweet, so the ice cream doesn’t become oversweet.
Glucose syrup gives ice cream body
If your ice cream is thin or coarse, try replacing part of the sugar with a low-DE glucose syrup (e.g. DE 40).
Why: Longer sugar chains (dextrins) bind water. The ice cream gets a firmer, slightly “chewy” body and fewer ice crystals.
Go easy on the milk powder
A tablespoon or two of milk powder will thicken ice cream. Don’t add more than that, and don’t replace it with large amounts of whey protein either.
Why: Milk proteins reduce iciness, but they bring lactose with them. Too much lactose crystallises and makes the ice cream sandy.
Leaving out the yolks? Adjust the fat too
Egg yolks make ice cream creamy — the usual amount is 5–6 yolks per litre of mix. If you leave them out, increase the proportion of cream or choose a recipe developed without eggs.
Why: Yolks emulsify and thicken. No single ingredient replaces them directly, so you need to change the fat balance of the whole mix.
Rub vanilla seeds into a little liquid first
Rub the seeds scraped from the pod into a small amount of milk or sugar first, and only then stir them into the whole mix.
Why: The seeds easily clump together, and the clump won’t break up once it is in the mix.
Heat egg custard and check it with a thermometer
Heat a custard base with yolks to at least 71 °C and check with a thermometer. In zmrzka recipes we cook it to 82–84 °C, when the custard thickens. Don’t taste the mix before it is fully cooked.
Why: Salmonella, which can be present even inside the egg, is killed at 71 °C. Above 84 °C the yolks start to curdle.
Ageing
Age the mix for at least 4 hours
Put the cooled mix in the fridge for at least 4 hours, ideally overnight. Ageing the mix at 5 °C or below is worth it even when you’re in a hurry.
Why: During ageing the fat crystallises and the proteins and stabilisers bind water. The mix then whips up better and the ice cream is smoother.
Cool the hot mix in an ice bath
Stand the pan or bowl with the mix in a larger container of cold water and ice, and stir now and then. Move it to the fridge once it is lukewarm.
Why: The faster the mix passes through the temperatures at which bacteria multiply, the better. Manufacturers also chill pasteurised mix straight down to fridge temperature.
Cover the mix while it ages
Press cling film onto the surface of the mix or close the container with a lid.
Why: An uncovered mix forms a skin and picks up smells from the fridge — fat absorbs them readily.
Use a cooked mix within 48 hours
Keep the mix in the fridge for no more than two days. If you don’t get round to freezing it, throw it away.
Why: Slovak Decree No. 82/2018 requires ice cream shops to discard pasteurised mix that has not been used within 48 hours. At home it is a sensible limit too.
Freezing
Put the mix into the machine as cold as possible
Pour the mix into the ice cream maker straight from the fridge. If you have only just cooked it, wait until it is completely cold.
Why: The faster the mix freezes, the smaller the ice crystals and the smoother the ice cream.
Freeze by texture, not by the clock
The ice cream is ready when it holds its shape and has the consistency of soft serve. Treat the time in the recipe as a guide.
Why: Machines, quantities and mix temperatures all vary. Churning for too long can overwork the ice cream; too short leaves it runny.
Harden machine-churned ice cream in the freezer
Ice cream comes out of the machine soft. If you want scoops, transfer it to a chilled container and let it harden in the freezer for 1–3 hours.
Why: By the end of churning only about half of the water is frozen. The rest freezes during hardening.
Harden in a shallow metal container
For hardening, use a shallow stainless steel or tin container, chilled in advance, and put it at the back of the freezer.
Why: Metal conducts cold better than plastic or glass, and a large surface speeds up freezing — the crystals stay small. Glass can crack in the freezer.
Freeze the freezer bowl for at least 24 hours
Put the bowl in the freezer the day before. Shake it before use — if you can hear liquid sloshing inside, it isn’t ready yet.
Why: The bowl has a coolant in its wall that has to freeze completely. Otherwise the mix won’t freeze in time and stays slushy.
Take the bowl out of the freezer at the last moment
Have the mix ready in the fridge, take the bowl out just before churning, switch the machine on and pour the mix in while it is running (unless the manufacturer’s instructions say otherwise). Don’t churn more at once than the manufacturer specifies.
Why: A frozen bowl holds only a limited amount of cold. Every minute on the worktop and every extra 100 ml uses it up.
CREAMi: freeze the tub for 24 hours on a level surface
Fill the tub only up to the max line, put the lid on and let it freeze for about 24 hours standing level on a flat shelf.
Why: The blade shaves the block layer by layer. An uneven or not fully frozen block is processed unevenly and, according to the manufacturer, can overload the machine.
CREAMi: re-spin powdery ice cream
If the ice cream looks powdery or crumbly after the first spin, add a tablespoon of milk and run Re-spin. Sometimes it takes two rounds.
Why: A block straight from the freezer is very cold. Only re-spinning and a little liquid warm it up to serving temperature, around −9 to −10 °C according to ice cream calculators.
CREAMi: a low-fat mix needs thickening
For mixes based on milk or a protein shake, or made with a sugar substitute, add a thickener as the recipe says (e.g. a little instant pudding mix, guar gum or quark).
Why: A lean mix freezes into hard ice and is crumbly after spinning. A thickener binds water and makes the ice cream creamier.
No machine: stir every 30–45 minutes
Pour the mix into a shallow metal container and put it in the freezer. For the first 2–3 hours, stir it thoroughly with a fork or whisk every 30–45 minutes, especially around the edges.
Why: Stirring breaks up the ice crystals as they form and works in a little air. Without it the mix freezes into a single block of ice.
No machine? Choose recipes with more fat
For no-machine ice cream, choose recipes with whipped cream, or with sweetened condensed milk. Leave mixes low in sugar and fat for the ice cream maker.
Why: In the freezer the mix sets slowly and larger crystals form. Fat and sugar slow their growth, and whipped cream also brings in the air that a machine would otherwise add.
Scrape granita with a fork
With granita, ice is what you want. Pour the flavoured liquid into a shallow container and scrape it into flakes with a fork every 30 minutes until it is completely frozen.
Why: Scraping separates the crystals from each other, so you get loose, flaky shaved ice instead of a hard block.
For nice cream, freeze ripe bananas in slices
Peel bananas with brown spots, slice them into rounds and freeze them spread out on a plate. Then blend them in a high-speed blender and serve straight away.
Why: Ripe bananas are sweeter, so you don’t need to add sugar. Small pieces blend more easily and the blender doesn’t overheat.
Storage
Your freezer should be at −18 °C or colder
Check your freezer’s temperature with a thermometer. Ice cream needs −18 °C or lower.
Why: −18 °C is the legal storage standard for ice cream in both Slovakia and the Czech Republic. At higher temperatures the crystals in ice cream grow faster.
Protect ice cream from temperature swings
Don’t leave ice cream out on the table longer than necessary, and put it back straight away. Don’t open the freezer more than you need to.
Why: Every time it warms up, the smallest crystals melt, and when it cools again the water freezes onto the larger ones. Temperature swings are the main cause of icy ice cream.
Cover the surface of the ice cream with film
Press cling film or baking paper onto the smoothed surface of the ice cream and close the container. Wrap an opened shop-bought tub in film.
Why: The film stops the surface drying out and frosting over. The ice cream also won’t pick up smells from the freezer.
Not in the door for longer storage
Put ice cream you want to keep for more than a few days at the back of the freezer. The door or the front is only suitable for a portion you’ll eat soon.
Why: It is warmer at the front and the temperature fluctuates when the door is opened. The ice cream is softer there, but crystals grow in it faster.
Eat homemade ice cream within 1–2 weeks
Homemade ice cream is at its best in the first few days. As a rough guide, eat it within one to two weeks; after that its texture noticeably deteriorates.
Why: Homemade ice cream has no industrial stabilisers and less milk solids, so it quickly turns grainy in storage. This is about quality, not safety.
Don’t refreeze melted ice cream
Don’t refreeze ice cream that has melted (for example on the way home from the shop or during a power cut). Eat it straight away or use it in a milkshake, for instance.
Why: Refrozen ice cream has an irreversibly coarse, icy texture, and bacteria can multiply in the melted mix. In Slovakia, Decree No. 82/2018 prohibits selling it.
Don’t buy ice cream with frost on it
In the shop, look at the packaging: a misshapen tub, frost or ice crystals inside suggest the ice cream has thawed along the way.
Why: The Czech Agriculture and Food Inspection Authority (SZPI) advises against buying such ice cream — refreezing spoils the quality and may also pose a hygiene risk.
Serving
Let ice cream soften for 5–10 minutes before serving
Take the ice cream out of the freezer 5–10 minutes before serving, or move it to the fridge for 15–20 minutes.
Why: At −18 °C ice cream is hard and flavours come through less when it is that cold. A few degrees warmer makes it creamy.
Serve gelato warmer than cream ice cream
As a rough guide, gelato is served at −12 to −14 °C and cream ice cream at −14 to −16 °C. At home this means letting gelato soften a little longer.
Why: Gelato has less fat and air, so at the same temperature it feels harder and colder. When a little warmer it is smooth and the flavour is more pronounced.
Dip the scoop in warm water
Dip a metal scoop into a mug of warm water, wipe it dry and scoop. Repeat for every scoop.
Why: The warm metal slightly melts the ice cream right next to the scoop, so the scoop releases easily and rolls neatly.
Chill the bowls in advance
In summer, put the bowls or glasses in the freezer for 10–15 minutes while you get the ice cream ready.
Why: A warm bowl melts ice cream from underneath. A chilled one keeps the scoops looking good for longer.
Fruit
Soak pieces of fruit in syrup first
Before adding raw pieces of fruit to ice cream, leave them for at least an hour in a thick sugar syrup (or in a little liqueur, for adults only) and drain them.
Why: Fruit is about 90 % water and on its own freezes into hard, icy chunks. The sugar that soaks in lowers its freezing point.
Use 15–25 % fruit in fruit ice cream
A dairy fruit ice cream should contain at least 15 % fruit (less is enough with tart fruit). For a bold flavour, go towards the upper end.
Why: Industry uses this range too. Slovak Decree No. 82/2018 requires at least 15 % fruit content in fruit ice cream, or 10 % for tart and exotic fruit.
Sorbet deserves plenty of fruit
Use at least a quarter fruit in a sorbet, and preferably much more. Choose very ripe fruit, which brings its own sugar.
Why: The law in both Slovakia and the Czech Republic requires at least 25 % fruit in sorbet. Ripe fruit has more sugar and pectin, so the sorbet is less icy.
You can cook the fruit briefly
Briefly cook strawberries, apricots or plums with sugar and let them cool. A purée or pieces made this way work better in ice cream than raw fruit.
Why: Cooked fruit is microbiologically safer and doesn’t freeze rock-hard in ice cream. That is why industry uses it routinely.
Citrus flavour comes from the zest, not just the juice
For lemon or orange ice cream, also grate the zest of unwaxed fruit, without the bitter white pith. Infuse it in warm milk and strain.
Why: The aromatic oils are mainly in the zest. Juice adds acidity, but a lot of juice dilutes the mix with water and makes it icier.
Chocolate and nuts
Heat cocoa together with the mix
Mix the cocoa with the sugar and stir it into the milk before heating. The usual amount is around 3 % cocoa powder or 5 % cocoa mass.
Why: Cocoa disperses better when warm and releases its full flavour. A mix with cocoa is thicker, so stir it thoroughly.
Use around 10 % nuts
Add nut paste or chopped nuts at roughly a tenth of the weight of the mix.
Why: This proportion is also used commercially. Nuts carry a lot of fat; with more, the ice cream can become heavy or even greasy.
Toast the nuts first
Toast the nuts in a dry frying pan or in the oven at 160–170 °C until golden, then let them cool.
Why: Toasting brings out the flavour and reduces the bacteria on the surface of the nuts — they go into the ice cream without further cooking.
Pistachio ice cream shouldn’t be bright green
Use uncoloured pistachios and pure pistachio paste. The resulting colour will be greenish brown to olive — that’s fine.
Why: A bright green colour in pistachio ice cream usually comes from food colouring, not from the nuts.
Buy nuts fresh and store them cool
Buy pistachios and peanuts from a reliable seller and keep them in the fridge in a closed container. Throw away nuts that smell musty or are mouldy.
Why: Pistachios and peanuts are at risk of aflatoxin contamination. Kept cool, nuts also go rancid more slowly and don’t develop a stale taste.
Eat ice cream with nut pieces sooner
Don’t store ice cream with chopped nuts, biscuits or crumbs for long. It’s better to add the pieces only to the portion you’ll eat in the next few days.
Why: The pieces draw moisture from the ice cream, go soft and act as seeds on which lactose crystallises. The ice cream around them turns coarse sooner.
Mix-ins
Add mix-ins at the very end of churning
Add chocolate, nuts or biscuits to the machine in the last 1–2 minutes, when the ice cream has a soft-serve consistency. Or fold them in by hand as you transfer it to a container.
Why: In a thin mix the pieces sink to the bottom; in firmer ice cream they stay evenly distributed. Long churning would break them up.
Chill mix-ins in advance
Put chopped chocolate, biscuits or pieces of cake in the freezer for at least 30 minutes while the ice cream is churning.
Why: Room-temperature mix-ins melt the ice cream around them, which then refreezes with coarser crystals.
Layer sauces, don’t stir them in
For a ripple, use a completely cooled sauce (caramel, fruit sauce). Alternate layers of ice cream and a few spoonfuls of sauce in the container, then draw a knife through once or twice.
Why: A warm sauce melts the ice cream and blends into it completely when stirred — instead of streaks you get a single-coloured mix.
Make stracciatella with melted chocolate
Instead of chopped chocolate, drizzle the ice cream at the end of churning with a thin stream of melted, only lukewarm chocolate. It sets instantly into thin, crisp flakes.
Why: Large chunks of chocolate are hard when frozen and you can barely taste them. Thin flakes melt in the mouth together with the ice cream.
Alcohol
No more than 3 tablespoons of spirits per litre
Add no more than about three tablespoons of strong alcohol (rum, 40 % liqueur) per litre of mix. Stir it into the chilled mix just before churning.
Why: Alcohol doesn’t freeze in the freezer and strongly lowers the freezing point. With more, the ice cream stays slushy. Commercial ice cream may contain no more than 3 % alcohol.
Label ice cream with alcohol and keep it from children
Store ice cream containing alcohol separately and label the container clearly. Don’t give it to children.
Why: You can hardly taste alcohol in ice cream, so it is easy to mix up. Added to a cold mix, it doesn’t evaporate.
For softness, adjust the sugars rather than adding alcohol
If you add alcohol only to keep the ice cream soft, try replacing part of the sugar with dextrose instead.
Why: Dextrose softens ice cream in a similar way but without the taste of alcohol, so children and drivers can eat it too.
Wine or sparkling wine suits sorbet
With weaker alcohol such as wine you can add more — as a guide, up to 125 ml per litre of sorbet. With spirits, stick to a few tablespoons.
Why: What matters is the amount of pure alcohol, not the volume of the drink. Wine contains several times less than spirits.
Sugars and sweeteners
Stevia and sucralose don’t replace the solids of sugar
If you replace sugar with stevia or sucralose, make up the bulk of the mix too — for example with a polyol, fibre or a little milk powder.
Why: Intense sweeteners are added in milligrams. They sweeten but neither lower the freezing point nor add solids, so without a replacement the ice cream freezes rock-hard.
With erythritol, watch the portion size
Serve ice cream sweetened with erythritol in smaller portions, especially to children. A child weighing 30 kg should not eat more than 15 g of erythritol a day.
Why: In 2023 the European Food Safety Authority (EFSA) set an acceptable daily intake for erythritol of 0.5 g per kilogram of body weight because of its laxative effect.
Lots of polyols can have a laxative effect
With ice creams containing xylitol, erythritol or maltitol, start with a small portion and see how well you tolerate them.
Why: In the EU, foods with more than 10 % added polyols must carry a warning that excessive consumption may have laxative effects.
Never give ice cream with xylitol to dogs
Don’t give dogs ice cream containing xylitol (birch sugar, E 967), not even a lick, and wash the bowl straight away. If your dog eats some, call a vet.
Why: Xylitol is poisonous to dogs: even a small amount causes a sharp drop in blood sugar, with symptoms appearing within 10–60 minutes. The US Food and Drug Administration (FDA) warns about this.
Replace allulose in US recipes
American “keto” recipes often use allulose. In the EU it is not (as of 2026) authorised as a food, so replace it with, for example, a combination of dextrose and erythritol.
Why: In 2025 EFSA was unable to confirm the safety of allulose owing to insufficient data. Until the EU approves it, it cannot legally be sold here as a food.
Sweeteners are not a weight-loss tool
Treat “sugar-free” ice cream as an occasional alternative, not as a way to lose weight. A smaller portion of ordinary ice cream is often the simpler solution.
Why: In 2023 the WHO advised against using non-sugar sweeteners for weight control — in the long term they did not reduce body fat. The recommendation does not apply to people with diabetes.
Troubleshooting
The ice cream is rock-hard
Now: let it soften for 10–15 minutes or move it to the fridge for a while. Next time: replace part of the sugar with dextrose, don’t reduce the sugar, and eat the ice cream fresh.
Why: The usual causes are too little sugar and solids, a very cold freezer or long storage. Sugars keep part of the water unfrozen.
The ice cream is sandy
If tiny grains that don’t dissolve are left on your tongue, next time use less milk powder or whey, harden the ice cream quickly and store it at a steady temperature.
Why: These are lactose crystals. Unlike ice, they don’t melt in the mouth. They form when there are too many milk solids, when freezing is slow and when the temperature fluctuates.
The ice cream is icy and coarse
Age the mix overnight, churn it as cold as possible, harden it in a metal container and protect it from temperature swings. More solids (milk solids, glucose syrup) or a stabiliser also help.
Why: Large crystals form with slow freezing, short ageing, too few solids and, above all, repeated warming and cooling.
The ice cream is buttery, with greasy specks
Churn for less time — switch the machine off as soon as the ice cream holds its shape. In mixes with a lot of cream, replace part of the cream with milk.
Why: Long churning makes the fat globules clump into tiny lumps of butter, just as with cream that has been whipped too long.
The ice cream won’t freeze in the machine
Check that the bowl was frozen for at least 24 hours, that the mix was well chilled and that you didn’t add too much alcohol or sugar. You can pour the slush into a container and finish it in the freezer, stirring.
Why: A freezer bowl has a limited reserve of cold, and a warm mix uses it up. Alcohol and sugars lower the freezing point; with too much, the mix won’t freeze.
The ice cream melts quickly into liquid
Increase the solids in the mix (a little milk powder, an egg yolk, glucose syrup) or add a small amount of stabiliser, such as locust bean gum or guar gum.
Why: Ice cream with a weak body has few solids, a lot of air and little that binds water. That water is released as soon as it melts.
The ice cream is too soft even after hardening
Reduce the alcohol, replace some of the dextrose or fructose with ordinary sugar, and check your freezer’s temperature.
Why: Simple sugars (dextrose, fructose, honey, invert sugar syrup) and alcohol lower the freezing point more than beet sugar. Too much of them makes ice cream sticky and soft.
The ice cream isn’t sweet enough once frozen
Taste the mix before churning (an egg-based one only after cooking) — it should be noticeably sweeter than you want the ice cream to be. Let the ice cream soften before serving.
Why: Cold dulls our perception of sweetness and flavour. That is why very cold ice cream tastes less sweet than the same mix at room temperature.
The ice cream is gummy or pasty
Next time use less thickener or stabiliser (guar, locust bean gum, starch) — half is often enough. Also check that the ice cream took in enough air in the machine.
Why: Stabilisers work at tenths of a per cent. Too much of them, or too little air, results in a stretchy, pasty mass.
The ice cream is crumbly and snowy
Add solids to the mix — more dairy, an egg yolk or a little stabiliser — and don’t churn it longer than necessary.
Why: A crumbly texture forms when ice cream has a lot of air and too few solids, proteins or stabilisers to hold it together.
The ice cream has shrunk away from the sides
Eat such ice cream as soon as possible. Next time, store it at a steady temperature and don’t expose it to big swings (such as a journey in a hot car).
Why: This is shrinkage: with changes in temperature and pressure, the air bubbles in the ice cream merge and escape, so the volume drops.
There is frost on the surface of the ice cream
Scrape off the icy layer and eat the rest soon. Next time, press film onto the surface, use a smaller container with no air above the ice cream and don’t open the freezer more than you need to.
Why: With temperature swings, water from the ice cream evaporates and freezes as frost on the colder surface or the lid.
CREAMi: the ice cream is crumbly after spinning
Add 1–2 tablespoons of milk or cream, run Re-spin and repeat if needed. Next time, add more fat, sugar or thickener to the mix.
Why: Mixes low in sugar and fat freeze very hard in the freezer, and the machine first breaks them down into powder. Liquid and another round bring them together into a cream.
Hygiene
Take the ice cream maker apart and wash it after every use
Remove the paddle, lid and bowl, wash them in warm soapy water and let them dry completely. Wash a freezer bowl by hand unless the manufacturer says it is dishwasher-safe.
Why: Once the mix is cooked, nothing will kill bacteria any more — cleanliness is the only protection. Milk residue in the joints between parts is an ideal breeding ground.
Never pour leftover mix or melted ice cream back in
Don’t pour mix that has stood at room temperature, or melted ice cream, back into the machine or into fresh mix.
Why: The Czech Agriculture and Food Inspection Authority (SZPI) names pouring leftovers back into the machine as a typical cause of substandard soft serve — in 2025, 46 % of the samples it checked failed.
Use only clean utensils after cooking
Use clean, dry utensils for the cooled mix — thermometer, sieve and scoop alike. Rinse and wipe the thermometer after every reading.
Why: Ice cream is not heated again after pasteurisation, so any contamination from utensils ends up in the finished ice cream.
Always taste with a clean spoon
When tasting the mix or the ice cream, use a new clean spoon every time and never put a licked spoon back into the container.
Why: Bacteria from your mouth can multiply in the mix, and freezing won’t get rid of them.
Be stricter for pregnant women, older people and young children
If you are serving ice cream to pregnant women, older people or anyone with a weakened immune system, use only pasteurised ingredients, keep to good hygiene and don’t buy ice cream from uncertain sources.
Why: Listeria survives freezing, and a small amount is enough to make vulnerable people ill. In the outbreaks linked to ice cream in the USA (2015) and in Britain (2024–25), it was mainly older people who fell ill.
Don’t give ice cream with honey to babies under 1
Don’t give honey, or ice cream or any other food containing honey, to children under one year old.
Why: Honey can contain spores of the bacterium that causes infant botulism. Ordinary cooking doesn’t destroy them, and freezing certainly doesn’t.
