Lactose-free ice cream

Lactose-free ice cream recipes made with lactose-free milk and cream — and what separates “lactose-free” from “dairy-free”.

“Lactose-free” and “dairy-free” are not the same thing. Lactose-free milk and cream are still dairy: the lactose in them has been split by the enzyme lactase into glucose and galactose. That suits lactose intolerance; it does nothing for a milk protein allergy, where the vegan recipes are the place to look.

Split lactose is sweeter and lowers the freezing point more than lactose itself, so ice cream made with lactose-free milk tends to be a touch sweeter and softer. The recipes account for it — the composition is calculated from the PAC and POD values of each sugar.
