Ice cream from 2–3 ingredients

The simplest ice cream recipes — two or three ingredients, most of them with no cooking and no machine.

The fewer the ingredients, the more each one has to do. Sweetened condensed milk brings sugar and solids in one go, a frozen banana needs no fat at all (fibre and starch hold it together), and whipped cream stands in for the air a machine would churn in.

Simplicity has a price: without a stabiliser or ageing, the ice crystals are larger, so these are at their best fresh, on the first or second day. Each recipe lists both total and hands-on time.
