Seasonal ice cream recipes

Ice cream by season: elderflower and rhubarb in spring, strawberries and apricots in summer, currants and pears in autumn.

Fruit in season carries more sugar and more aroma, so the mix needs less added sugar and no flavourings. Ripeness varies from piece to piece, though, so taste the mix before freezing and adjust the sugar if needed.

Fruit also freezes well for later: it keeps its aroma better than fruit shipped in out of season. For sorbets, bear in mind that frozen fruit releases more water, so the mix comes out thinner.
