Less sugar in ice cream: what works and what’s a compromise

Sugar in ice cream doesn’t just sweeten – it keeps it soft. How to cut it down without ending up with hard, icy ice cream.

Anyone who wants to eat less sugar often starts by simply cutting it by a third in a recipe. That works for a cake, but almost never for ice cream. Sugar in ice cream isn’t only there to sweeten — it also determines how hard the ice cream will be, how easily it scoops and whether it’s smooth or full of ice crystals.

Everything sugar does in ice cream

According to the ice cream technology textbook by Douglas Goff (University of Guelph), sweeteners make up 12–16 % by weight of a typical mix. In the mix they do four jobs at once:

  • they sweeten and bring out the flavour of the other ingredients,
  • they lower the freezing point — part of the water stays unfrozen even at −15 to −18 °C, which is why you can scoop ice cream with a spoon,
  • they add solids — they are the cheapest ingredient that “thickens” the mix and takes up space that would otherwise go to ice,
  • they affect texture — ice cream with enough sugar is smoother and finer.

If you remove sugar without replacing it, you lose all four functions. The ice cream will be less sweet, but above all harder and icier. Ice cream author David Lebovitz sums it up simply: sugar doesn’t freeze, so you shouldn’t change the amount in a recipe by eye.

According to Goff, an icy texture arises mainly when the mix lacks solids, protein or stabiliser. Less sugar means fewer solids — and therefore more free water that can freeze into large crystals.

PAC in brief

How strongly sugars lower the freezing point is expressed by a number called anti-freezing power (PAC) (from the Italian potere anticongelante). Ordinary sugar (sucrose) is taken as the baseline = 100. Approximate values quoted by ice cream calculators:

The values are approximate and vary by manufacturer and type of syrup. But the table shows the principle: simple sugars (monosaccharides) such as dextrose and fructose lower the freezing point more than sucrose. Goff warns that ice cream with a large share of fructose syrups is almost too soft in a home freezer.

What works

Replace part of the sucrose with dextrose

Dextrose is less sweet than sugar but keeps ice cream softer. If you replace part of the sugar with dextrose, the ice cream will be slightly less sweet at the same hardness. It’s not a dramatic cut in sugar, more a gentle fine-tuning of the taste.

Ripe fruit and milk proteins

  • Very ripe fruit brings its own sugars and solids, so fruit ice cream needs less added sugar.
  • Tvaroh (quark) and yogurt add protein. According to Goff, protein binds water, increases the viscosity of the mix and reduces iciness. It hardly lowers the freezing point, though, so it can’t replace sugar on its own.

Smaller portions and fresh ice cream

Ice cream with less sugar is best straight after churning. The ice crystals haven’t had time to grow and the texture is good. After a few days in the freezer the difference from a classic recipe becomes very noticeable. The answer is to make smaller batches and eat them within a few days.

Tip

Take lower-sugar ice cream out of the freezer 10–15 minutes before serving, or move it to the fridge for a while. Letting it warm slightly evens out some of the hardness.

Where it’s a compromise

  • Sorbets. In a sorbet, sugar is almost the only source of solids. You can reduce it only slightly, otherwise you end up with crushed ice.
  • Ice cream for long storage. When the freezer temperature fluctuates, crystals grow. A mix with less sugar is more sensitive to this.
  • No-machine ice cream. Without churning in an ice cream maker the crystals are larger from the start, and a low sugar content makes it even worse.

Warning

Non-bulking sweeteners (stevia, sucralose) sweeten, but they add no solids and don’t soften the ice cream. If you replace sugar with them one for one, the ice cream will be rock hard. More in the article on sweeteners.

How much sugar is in ice cream and why it matters

According to the USDA FoodData Central database, ordinary vanilla ice cream has about 21 g of sugars per 100 g, chocolate around 25 g and sorbet as much as around 26 g. Part of the sugars in dairy ice cream is lactose from the milk.

The World Health Organization (WHO, 2015) recommends that free sugars make up less than 10 % of daily energy intake, ideally less than 5 %. Free sugars include added sugars and the sugars in honey, syrups and fruit juices — lactose from milk and sugars in whole fruit don’t count.

In practice this means: reducing sugar in homemade ice cream makes sense, but in moderation. An ice cream with a quarter less sugar that tastes good and gets eaten is a better choice than a “healthy” ice cream nobody finishes.

Tip
