Salt and ice (bucket, ball, bag)
The oldest method: the container with the base is surrounded by ice and salt, which is much colder than ice alone. After 20–30 minutes of stirring you have ice cream — and a great experience for children.
Before refrigerators were invented, this was the main way ice cream was made: the container with the base was packed in ice sprinkled with salt and stirred. The method still works today — in a wooden bucket with a crank, in an electric bucket, in a plastic ball you roll around, or in an ordinary resealable bag. It needs no freezer for pre-freezing and no expensive machine, just ice, salt and a bit of effort.
Why salt and ice freeze
Pure ice melts at 0 °C. Salt lowers the melting point: in salt water, ice starts to melt even at temperatures well below zero. Melting needs heat, and the ice takes it from its surroundings — from the wall of the container and the base inside it. That is why a mixture of ice and salt is much colder than ice alone.

The lowest temperature a mixture of table salt, water and ice can reach is −21.2 °C at 23.3 % salt. In an open bucket you only get close to it in practice; it depends on the salt ratio, how finely the ice is crushed and stirring.
The first US patent for a hand-cranked ice cream freezer was granted to Nancy Johnson of Philadelphia in 1843. The principle has not changed since.
Variants
- Bucket with a crank or motor. Inside is a metal container with the base and a dasher, surrounded by ice and salt. Manual ones are turned with a crank, electric ones have a motor. In some models the container turns and the dasher stays still. Buckets usually hold several litres.
- Ice cream ball. A plastic ball with two chambers: the base goes in one, ice and rock salt in the other. You roll or shake the ball for about 20 minutes. They come in sizes of roughly 0.5 l and 1 l and are designed for camping.
- Bag. Put a small resealable bag with the base inside a larger bag with ice and salt, and shake it. This is the simplest experiment — with children, for example.
Step by step (bucket)
The method is based on the manual from Nostalgia, a manufacturer of electric buckets.
- Chill both the base and the inner container in the fridge.
- Fill the container no more than two thirds full with the base. It expands as it freezes.
- Prepare the ice. Allow 1–2 medium bags of ice per batch. Crush larger chunks.
- Layer ice and salt around the container: roughly 6 mugs of ice, then half a mug of salt, and repeat. The ratio is about 12 : 1 by volume. One batch uses 2–4 mugs of salt, or roughly 0.45–0.9 kg. More salt freezes faster. Coarse rock salt is best, but table salt works too.
- Churn for about 30 minutes. Stir the ice and salt every 10–15 minutes. When the ice drops by 5–8 cm, top up with ice and salt.
- Before opening, clear the ice and salt from the lid and wipe off the salt water so it does not run into the ice cream.
- Take out the ice cream, transfer it to a container and either serve it straight away or let it harden in the freezer.
If the motor stops during churning, switch it off, break up the ice plugs around the container and carry on.

We did not find the temperature on removal or the overrun for this method in a reliable source. In principle it is similar to ice cream from an ice cream maker: soft, with a small amount of air. It suits cream ice cream, custard, sherbet and sorbet. Recipes with a bag method: vanilla ice cream without eggs and strawberry cream ice cream.
How to adapt a recipe
- Chill both the base and the container well — the colder the base, the less ice you use.
- Do not fill the container more than two thirds full.
- Stir pieces of fruit, chocolate or nuts into the finished ice cream so they do not jam the dasher.
- The base does not need to be special — an ordinary ice cream maker recipe works.
Maintenance and hygiene
- Salt water corrodes metal. After use, rinse metal parts thoroughly with clean water and dry them.
- Let a wooden bucket dry out properly after pouring away the salt water.
- Wash the inner container, dasher and lid like ordinary kitchen equipment.
- Pour salt water down the drain, not onto a lawn or flowerbed — salt harms plants.
Typical mistakes
- Too little salt — the base will not freeze, or freezes very slowly.
- Large chunks of ice — they jam the crank or the motor.
- Salt water above the level of the lid — it runs into the ice cream when you open it.
- Overfilled container — the base has no room to expand.
- A bag without a second layer — if it bursts, the ice cream is salty. Better to wrap the base in two bags.
What to look for when buying
In September 2026 we did not find salt-and-ice bucket ice cream makers in ordinary Czech and Slovak online shops (zbozi.cz); they are mostly bought abroad. When choosing, consider:
- manual or electric drive — a crank is part of the fun, a motor saves your arms,
- capacity — buckets are for large batches (several litres), a ball for one or two portions,
- material — a stainless steel container and a plastic or wooden bucket,
- a drain hole for the salt water.
For a one-off experiment you need nothing — two resealable bags, ice and salt are enough.
Safety: salt, ice and children
Warning
A mixture of ice and salt is well below zero and causes frostbite with prolonged skin contact. Children should hold the bag, ball or bucket only with gloves or through a thick towel, and only under adult supervision. If the skin turns white, goes numb or starts to burn painfully, stop the contact immediately and warm the area with lukewarm (not hot) water.
Further rules:
- Children should not taste the salt and ice or put it in their mouths.
- Make sure the salt water does not leak onto the floor — it is slippery and cold.
- Rinse the bag of ice cream with cold water before opening it so no salt gets into the ice cream.
Handled correctly, making ice cream with salt and ice is one of the best kitchen experiments for children: they see how salt changes the melting of ice, and at the end they get to enjoy their own ice cream.

- Stir the ice and salt every 10–15 minutes and top up the ice when it drops.
- Stir pieces of fruit or chocolate into the finished ice cream.
- Before opening, wipe the salt and salt water off the lid so they do not run into the ice cream.
