A liquid at −196 °C freezes the base in a few minutes. A spectacular show for trained staff, but at home it risks severe frostbite, suffocation and stomach damage.

Liquid nitrogen ice cream looks like magic: the base in the bowl is wrapped in a white cloud, and a moment later it has become ice cream. Some shops build a whole show around it. It is not for the home, though — and this page explains why. zmrzka has no recipes for liquid nitrogen and never will.

Do not use liquid nitrogen at home. It risks suffocation without warning symptoms, severe frostbite and, if swallowed, serious damage to internal organs. It is an industrial gas for trained staff with protective equipment, not a kitchen ingredient.

How it works

Liquid nitrogen boils at roughly −196 °C. When it is poured into an ice cream base, it immediately starts to evaporate and draws an enormous amount of heat out of the base. The base, which the operator stirs at the same time, freezes in a few minutes without a conventional ice cream maker. The white cloud is not nitrogen smoke — nitrogen is invisible — but water vapour from the air condensing in the cold gas.

Ice cream made with liquid nitrogen started to be sold commercially around 2006. It is often claimed that very fast freezing gives exceptionally small crystals; however, we did not find a verified study confirming this for this method.

Why not to do it at home

Suffocation without warning

At room temperature, one litre of liquid nitrogen produces about 694 litres of gas. Nitrogen displaces oxygen from the air, especially in a small, enclosed room such as a kitchen. It has no colour, taste or smell, and you cannot feel that you are suffocating — a lack of oxygen can lead to unconsciousness without any warning sensation.

Frostbite

A tiny drop of nitrogen often just “skates” over the skin, because a thin layer of vapour protects it for a moment. A puddle on the skin, nitrogen in a sleeve, or a soaked glove or towel, however, causes severe frostbite, similar to burns.

Pressure and explosion

Nitrogen must never be sealed in a container without venting. The gas released from the liquid rapidly builds up pressure in a closed container until it bursts. An accident of this kind happened, for example, at Texas A&M University in 2006.

Swallowing

Never eat or drink ice cream or a drink that still has vapour rising from it. Remnants of liquid nitrogen evaporate instantly in the body and expand rapidly. In 2012 a young woman in the UK lost her stomach after drinking a cocktail prepared with liquid nitrogen.

“Smoking” desserts and children

Colourful cereal balls dipped in liquid nitrogen were sold under the name Dragon’s Breath. When eaten, they make “smoke” come out of the mouth and nose. Burns to the gums, thumb and palate were reported, including in children.

Did you know?

In 2018 the US Food and Drug Administration (FDA) warned that foods and drinks prepared with liquid nitrogen at the point of sale can cause severe damage to skin and internal organs, and that inhaling the vapour poses a particular risk to people with asthma. This information comes from 2018 media reports; the original text of the warning is no longer available on the FDA website.

So do not buy such desserts for children. Even if you see them at a fair or festival, choose ordinary ice cream instead.

If you buy nitrogen ice cream at a shop

A professional business with trained staff, ventilation and the right equipment can prepare liquid nitrogen ice cream safely. As a customer, follow these rules:

  • Eat the ice cream only once vapour has stopped rising from it and the nitrogen has fully evaporated.
  • Do not breathe in the vapour rising from the bowl.
  • Give ice cream to children only after the nitrogen has fully evaporated.
  • If something looks like an unreasonable risk — such as “smoking” balls to eat — say no.

What liquid nitrogen involves in practice

Liquid nitrogen is not an ordinary consumer product. A business needs an industrial gas supplier, a special insulated container (Dewar flask), protective equipment, a well-ventilated space and trained staff. That is another reason zmrzka does not treat it as home equipment.

How to get fine ice cream safely

If what attracts you to nitrogen is mainly the fine texture, you can get close to it in safe ways:

  • The Ninja CREAMi and similar machines shave a frozen block with a blade and give very dense, fine ice cream.
  • A compressor ice cream maker freezes evenly, and you can make batches one after another.
  • An aged, well-chilled base and rapid hardening in the coldest part of the freezer help with any machine.

To start with, try fior di latte or lemon sorbet — both are simple, and every detail of the texture shows.
