Ice cream sundae with hot chocolate sauce
The classic sundae: vanilla ice cream, warm chocolate sauce and whipped cream. The sauce must be hot and thin — a thick one sets into a hard shell on the ice cream.

A sundae with hot chocolate sauce is the oldest answer to the question of what to do with ice cream. It is a contrast: cold and hot, smooth and crunchy.
The sauce is the one thing you have to get right. Chocolate melted in cream sets the instant it touches sub-zero ice cream — if it is thick, it turns into a hard shell that cracks under the spoon and flies out of the glass. So the sauce is thinned with milk or water to the consistency of runny honey and served warm, not boiling: around 50 °C. At that temperature it stays on the ice cream as a soft layer.
The second detail is the order. Whipped cream never goes under the sauce, always on top — otherwise it collapses under the heat.
What you need
- 6 scoops of vanilla ice cream (about 300 g)
- 80 g dark chocolate (50 to 70 % cocoa), broken up
- 80 ml double cream
- 40 ml milk to thin the sauce
- 1 tbsp sugar — only if the chocolate is very dark
- 150 ml whipped cream
- 2 tbsp chopped roasted nuts or flaked almonds
- 2 wafer rolls — optional
Method
- Put the glasses in the freezer. Toast the nuts in a dry pan until fragrant and let them cool.
- Heat the cream in a saucepan until it just begins to shiver at the edge. Do not let it boil.
- Take it off the heat, tip in the chocolate and leave it for a minute. Then whisk until the sauce is smooth and glossy.
- Add the milk a spoonful at a time until the sauce has the consistency of runny honey. Taste and add sugar if needed. Let it cool to comfortably warm — your hand should be able to hold the pan.
- Put three scoops of ice cream into each chilled glass.
- Pour over the warm sauce, add the whipped cream, then the nuts and a wafer roll. Serve immediately.
Serving and storage
The sauce keeps for a week in the fridge in a sealed jar. Reheat it over a water bath and thin it with milk again — it thickens as it cools.
Tips
- If the sauce sets hard on the ice cream, it was too thick or too cold. Stir in a spoonful of hot milk.
- Build the glass from the bottom: heaviest first (nuts, fruit), then ice cream, then sauce. Otherwise the whole thing slides.
- The combination that always works: vanilla and chocolate. If you want a third flavour, add salted caramel or coffee, not more fruit.
- Whip the cream only to soft peaks — over-whipped cream falls apart in the warmth.
Which ice cream works
Shop-bought will do, but homemade makes it a different dessert. These recipes of ours fit:
Amount: 3 scoops (about 150 g) per serving
French vanilla ice cream (with egg yolks)
A French-style classic: vanilla custard made from egg yolks, milk and cream. Smooth, rich and fragrant.
Egg-free vanilla ice cream (Philadelphia style)
Pure, creamy vanilla with no egg yolks — fresh, milky and ready without cooking a custard.
Vanilla frozen custard
Thick, silky vanilla custard with six egg yolks and very little air — a classic of the American Midwest.
Fior di latte
The purest gelato of all: milk, a little cream and sugar. No eggs, no vanilla — it tastes of fresh, sweet milk.
Salted caramel ice cream
Dark caramel with butter and sea salt in a smooth egg custard. Bittersweet and addictive.
Coffee gelato (caffè)
Gelato that tastes of good espresso — made with brewed coffee plus a little instant for intensity.

Banana split
A split banana and three scoops of three flavours in one dish. It looks like decoration, but it only works if the banana is not overripe.
Spaghetti ice cream (Spaghettieis)
Vanilla ice cream pushed through a potato ricer looks like spaghetti, strawberry purée like tomato sauce and white chocolate like parmesan. It all comes down to the temperature of the ice cream.
Affogato
A scoop of vanilla ice cream drowned in hot espresso. Two ingredients, five minutes, and the only thing that really matters is temperature — of the ice cream and of the coffee.
