Keeping your ice cream maker and kitchen clean
Once the mix has been cooked, hygiene is your only protection against bacteria. How to clean the ice cream maker, the bowl and your utensils, and why leftovers should never go back in.
Once you’ve heated the mix and cooled it down, the bacteria in it are destroyed. From that moment on, however, nothing will kill those that get in later – from the bowl, the paddle, a spoon or your hands. Freezing doesn’t remove them, it only stops them growing. That’s why keeping your ice cream maker clean is just as important as the right cooking temperature.
What we can learn from the professionals
The ice cream technology textbook by H. D. Goff (University of Guelph) explains that after pasteurisation the only protection against contamination is sanitation and hygiene. The freezing cylinder must be cleaned and sanitised after assembly and just before use. According to Goff, the manual assembly of many parts is a common source of contamination – every seal, blade and outlet valve is a place where milk residues can settle.
A Czech example shows what happens when this is forgotten.

In 2025 (up to 1 September), the Czech Agriculture and Food Inspection Authority (Státní zemědělská a potravinářská inspekce, SZPI) rejected 46 % of samples of soft serve and scooped ice cream (67 of 146); in 2024 the figure was 52 %. The reason was excessive Enterobacteriaceae – bacteria that signal poor hygiene.
SZPI names poor production hygiene, inadequate cleaning of equipment and failure to follow procedures as the main causes. A typical problem with soft serve: leftover mix isn’t poured away at the end of the day but goes back into the machine the next day. It should be added that SZPI samples selectively in high-risk outlets, so the figure doesn’t mean that half of all ice cream is unsafe.
Slovak Decree No. 82/2018 Z. z., for its part, requires businesses to discard pasteurised mix that hasn’t been used within 48 hours. For the home, that’s a sensible upper limit.
Your home ice cream maker, step by step
The rules below are derived from professional principles and adapted for home machines. The instructions from your machine’s manufacturer always take precedence.
Before use
- Wash your hands.
- Check that the bowl, paddle and lid are clean and dry. If the machine has been sitting in a cupboard for a while, rinse them.
- Assemble the machine just before freezing.
- Make sure your utensils (spatula, spoon, container for hardening) are washed and dry.
After use
- Transfer the ice cream straight away to a clean container for hardening.
- Take the machine apart into every removable part – paddle, lid, seals, and with compressor machines the removable bowl too.
- Wash the parts in warm water with washing-up liquid, especially the grooves and seals where the mix gets trapped.
- Rinse and leave to dry completely. Moisture in a closed machine encourages mould.
- Only wipe the fixed part (compressor, motor) with a damp cloth – never immerse it in water.
Warning
Wash a freezer bowl with cooling liquid in its walls according to the manufacturer’s instructions. Many manufacturers forbid the dishwasher and hot water, as they can damage the bowl. Only put it in the freezer when it is completely dry.
The mix and leftovers
- Don’t pour leftover mix back into the bottle with the rest or into the machine for the next day. This is exactly the mistake SZPI finds in businesses.
- Use the mix within 48 hours of cooking it, and keep it in the fridge while it ages.
- Use pasteurised milk and cream. The Minnesota Department of Health warns that raw milk can carry pathogens.
- Cool the mix quickly after cooking in an ice bath, and don’t keep it at room temperature.
- Don’t put anything in ice cream that wouldn’t be safe to eat unfrozen. Freezing doesn’t clean anything.
Tip
Always use a clean spoon to taste the mix. Never put a spoon that has been in your mouth back into the mix.
Utensils and containers

Hands and health
Anyone with diarrhoea, vomiting or an infection on their hands shouldn’t make ice cream for others. This applies at home just as it does in a shop. Children love to help – that’s great, just make sure they wash their hands thoroughly first and don’t taste from the shared bowl.
